Fried apple pie!!!



+For crust:
°4 c flour, plus more for roll
°1-1/2 tsp. baking powder
°3/4 tsp. salt
°1/2 c 8 tbsp. tablespoon vegetable shortening, melted and cooled
°2 large eggs
°3/4 cup whole milk
+For garnish :
°1/2 c apple cider
°1 tsp cornstarch
°5 firm, juicy apples preferably Braeburn, peeled, cored and cut into 1/4 inch cubes
°1/2 cup sugar
°1/2 teaspoon ground nutmeg preferably freshly ground
°1/4 tsp. ground cinnamon
°1 vanilla pod, halved widthwise
°1 tablespoon unsalted butter


To make the dough
Time the flour, baking powder and salt in the bowl of a stand mixer, use a large bowl if mixing by hand. Add melted shortening, eggs and milk. Using the paddle, mix the batter on low speed until the dry ingredients are moistened. Increase speed to medium and knead dough until no longer sticky, about 2 to 3 minutes, adding more flour a tablespoon at a time if dough seems very moist or sticky. His blend by hand, it will taking for 5 min to knead dough. Divide the dough in half, wrap each half in plastic wrap and refrigerate for 1 hour.
To make the filling
Meanwhile, prepare the apple filling. Line  rimmed baking sheet with paper parchment . Whisk 1/4 cup apple juice or cider with cornstarch in a small bowl and set aside. Place apples, sugar, nutmeg and cinnamon in a large bowl. Wrap half of the vanilla pod tightly in plastic wrap and set aside for another use. Cut the other half lengthwise down the middle. Opening pod & using knife to scrape out seeds; discarding pod. Adding seeds to the apples and mix with sugar also spices.
Melting butter in  saucepan on medium-high heat. Once melted, simmer the butter for 20 seconds, then stir in the apples. Cook with a lid askew until the apples begin to soften, about 5 to 7 minutes, stirring occasionally. Add the remaining 1/4 cup apple juice or cider and simmer, stirring occasionally, until the liquid is reduced by half, about 2 to 3 minutes. Stir in cornstarch slurry and cook until mixture thickens, 3-4 minutes. Transfer to prepared baking sheet or large bowl and let cool to room temperature, then cover with plastic wrap and refrigerate until chilled.
