°1/3 cup unsalted butter
°1 ½ cups biscuits (150 g)
°1 tbsp. sugar
°800g softened cream cheese
°1/3 c Bailey’s Irish Cream
°2/3 c rich or whipping cream
Preheat oven 350ºF (180ºC). Grease and line a 20 cm (8 in.) springform pan with parchment paper.
Crumble Cookies. Add the butter and sugar, mix well and pour the mixture into the mold. Spread the mixture evenly, press it well, then place the mold in the refrigerator.
Mix all the ingredients for the filling, then pour it over the cookie crust. Spreading filling evenly, then bake.
Baking for about 40 min. When the cheesecake seems firm, but still wobbles slightly in the center, turn off the oven, then let the cheesecake cool inside the oven.
Refrigerate a some min before serving.
