Ingredients (for 2 bowls)
°100 g Bjorg porridge or small oat flakes
°300g vanilla soy milk
°3 medium bananas
°1 C. at s. coconut butter (or coconut oil)
°40g maple syrup
°1 pinch of salt
°grated coconut (optional)
In a small saucepan, pour the cereal and soy milk. Bring to a boil and simmer, 1 to 2 minutes, until the flakes puff up and the milk is almost completely absorbed.
At the same time, peel the bananas and cut them into slices.
In a skillet, melt the coconut butter with the maple syrup. As soon as the mixture begins to bubble, add the banana slices and the pinch of salt. Leave them to stew for 2 minutes then gently turn them over. As soon as they become transparent, remove from heat.
Add half the bananas to the porridge and mash them with a fork. Mix everything well. Divide the mixture into two bowls. Finish with the remaining banana slices.
Sprinkle with grated coconut if desired. You can also add dark chocolate chips.
